First, you need the Skill Elephant Rider which cost 2 Skillpoints. After then you need to find an Elephant. If you find one then hold X next to the elephant to ride it. I found my Elephants often near the Outposts and Roads. You dont need to get all 30 Kills in One Ride, the Achievement is cumulative.
